Star Bread


 Star Bread, also known as Putok, is a traditional Filipino bread known for its slightly sweet flavor, crumbly texture, and iconic "burst" or star-shaped top. The name "putok" means "explode" in Filipino, referring to the cracked or split top that forms during baking. Often topped with sugar, it’s a nostalgic favorite enjoyed with coffee or hot chocolate.



Ingredients for Star Bread (Putok)

For the Dough:

  • 3 cups all-purpose flour (plus extra for dusting)

  • 1/3 cup sugar

  • 1/2 teaspoon salt

  • 1 teaspoon instant yeast

  • 1/4 cup warm milk

  • 1/4 cup softened butter

  • 1/2 cup warm water (adjust as needed)

  • 1 large egg

For the Topping:

  • 1/4 cup granulated sugar (for sprinkling)

  • 1 egg yolk (beaten with 1 tablespoon milk, for egg wash)

How to Bake Star Bread (Putok)

  1. Activate the yeast:

    • In a small bowl, dissolve the yeast in warm milk with 1 teaspoon of sugar. Let it sit for 5–10 minutes until foamy.

  2. Mix the dough:

    • In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture, egg, butter, and warm water. Mix until a dough forms.

  3. Knead the dough:

    • Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5 minutes.

  4. First proofing:

    • Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise for 1–2 hours, or until doubled in size.

  5. Shape the bread:

    • Punch down the dough and divide it into equal portions (around 8–10 pieces). Roll each portion into a smooth ball.

    • Using scissors or a sharp knife, make a small "X" or star-like incision on top of each dough ball.

  6. Second proofing:

    • Arrange the shaped dough on a greased or parchment-lined baking tray, ensuring enough space for expansion. Cover and let rise again for 30–45 minutes.

  7. Apply the topping:

    • Brush the tops of the dough with the egg wash. Sprinkle granulated sugar generously over each piece for a crunchy, sweet topping.

  8. Bake the bread:

    • Preheat the oven to 175°C (350°F). Bake for 18–20 minutes, or until the bread is golden brown and the tops have "exploded" into the characteristic star shape.

  9. Cool and serve:

    • Let the bread cool slightly before serving. Best enjoyed fresh with a cup of coffee or hot chocolate.
