How to Bake Star Bread (Putok)
Activate the yeast:
In a small bowl, dissolve the yeast in warm milk with 1 teaspoon of sugar. Let it sit for 5–10 minutes until foamy.
Mix the dough:
In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture, egg, butter, and warm water. Mix until a dough forms.
Knead the dough:
Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5 minutes.
First proofing:
Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise for 1–2 hours, or until doubled in size.
Shape the bread:
Punch down the dough and divide it into equal portions (around 8–10 pieces). Roll each portion into a smooth ball.
Using scissors or a sharp knife, make a small "X" or star-like incision on top of each dough ball.
Second proofing:
Arrange the shaped dough on a greased or parchment-lined baking tray, ensuring enough space for expansion. Cover and let rise again for 30–45 minutes.
Apply the topping:
Brush the tops of the dough with the egg wash. Sprinkle granulated sugar generously over each piece for a crunchy, sweet topping.
Bake the bread:
