Pan de Nora


Pan de Nora is a Filipino bread inspired by Nora Aunor, the legendary actress and singer affectionately called the "Superstar" of Philippine showbiz. The bread gained popularity in local bakeries, often recognized by its unique, soft texture and creamy filling. Though the recipe varies across regions, it is commonly a simple yet comforting treat.




Ingredients for Pan de Nora

For the Dough:

  • 3 1/2 cups all-purpose flour

  • 1/3 cup sugar

  • 1/2 teaspoon salt

  • 1 teaspoon instant yeast

  • 1/4 cup warm milk

  • 1/4 cup softened butter

  • 1 large egg

  • 1/2 cup warm water (adjust as needed)

For the Filling:

  • 1/2 cup condensed milk

  • 1/4 cup butter (softened)

  • 1 teaspoon vanilla extract

Optional Topping:

  • Breadcrumbs

  • Powdered sugar

How to Bake Pan de Nora

  1. Activate the yeast:

    • In a small bowl, dissolve the yeast in warm milk with 1 teaspoon of sugar. Let it sit for 5–10 minutes until foamy.

  2. Prepare the dough:

    • In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture, egg, softened butter, and warm water. Mix until a dough forms.

  3. Knead the dough:

    • Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5 minutes.

  4. First proofing:

    • Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise for 1–2 hours, or until doubled in size.

  5. Prepare the filling:

    • In a bowl, mix condensed milk, softened butter, and vanilla extract until smooth. Set aside.

  6. Shape the bread:

    • Punch down the dough to release air. Divide it into equal portions (around 8–10 pieces). Flatten each portion into a disc and place a spoonful of filling in the center. Seal the edges tightly and shape into a smooth ball or oval.

  7. Second proofing:

    • Arrange the filled dough on a greased or parchment-lined baking tray, seam-side down. Cover and let rise again for 30–45 minutes.

  8. Bake the bread:

    • Preheat the oven to 175°C (350°F). Bake for 15–20 minutes, or until the bread is golden brown.

  9. Optional topping:

    • Brush the tops with melted butter and sprinkle breadcrumbs or powdered sugar for added texture and sweetness.

  10. Cool and serve:

    • Allow the bread to cool slightly before serving. Enjoy fresh with coffee or as a snack!
