Monay is a classic Filipino bread known for its soft, dense texture and slightly sweet taste. It has a distinct oval shape with a deep cut in the middle, resembling a "buns" look, which is humorously linked to its name (monay can also mean "buttocks" in Filipino slang). This bread is perfect for breakfast or snacks, paired with butter, jam, or even cheese.
Ingredients for Monay Bread
For the Dough:
4 cups all-purpose flour (plus extra for dusting)
1/3 cup sugar
1/2 teaspoon salt
1 teaspoon instant yeast
1/4 cup warm milk
1/4 cup softened butter or margarine
1/2 cup warm water (adjust as needed)
2 large eggs
Optional Glaze:
1 egg yolk beaten with 1 tablespoon milk
How to Make Monay Bread
Activate the yeast:
In a small bowl, dissolve the yeast in warm milk with 1 teaspoon of sugar. Let it sit for 5–10 minutes until foamy.
Mix the dry ingredients:
In a large mixing bowl, combine the flour, sugar, and salt. Mix well.
Combine wet and dry ingredients:
Add the yeast mixture, eggs, softened butter, and warm water to the dry ingredients. Mix until a dough forms.
Knead the dough:
Transfer the dough to a floured surface and knead for 10–12 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 7–8 minutes.
First proofing:
Place the dough in a greased bowl, cover it with plastic wrap or a damp cloth, and let it rise for 1–2 hours, or until doubled in size.
Shape the bread:
Punch down the dough to release air. Divide it into equal portions (about 8–10 pieces). Roll each portion into a smooth oval shape.
Use the side of your palm or a blunt knife to make a deep indentation lengthwise in the center of each dough piece, giving it the signature monay look.
Second proofing:
Arrange the shaped dough on a greased or parchment-lined baking tray. Cover and let rise again for 30–45 minutes, or until slightly puffy.
Apply the glaze:
Brush the tops with the egg yolk and milk mixture for a shiny, golden finish.
Bake the bread:
Preheat the oven to 175°C (350°F). Bake for 18–22 minutes, or until the bread is golden brown.
Cool and serve:
Allow the bread to cool slightly before serving. Enjoy plain or with your favorite spread!
