How to Bake Filipino Squash Bread:
Prepare the kalabasa:
Peel, remove the seeds, and cut the kalabasa into small cubes. Steam or boil until soft, then mash and let it cool.
Activate the yeast:
In a small bowl, dissolve the yeast in warm milk (around 38°C or 100°F). Let it sit for 5–10 minutes until it becomes foamy.
Mix the dry ingredients:
In a large mixing bowl, combine the flour, sugar, and salt. Mix well.
Incorporate the wet ingredients:
Add the mashed kalabasa, yeast mixture, egg, and softened butter to the dry ingredients. Mix until a dough forms.
Knead the dough:
Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5 minutes.
First proofing:
Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise for 1–2 hours, or until it doubles in size.
Shape the bread:
Punch down the dough to release air. Divide it into equal portions (around 8–10 pieces) and shape them into balls, rolls, or small loaves.
Second proofing:
Arrange the shaped dough on a baking tray lined with parchment paper or greased. Cover and let it rise again for 30–45 minutes until puffy.
Add toppings (optional):
Brush the tops with milk or egg wash for a golden finish. Sprinkle sesame seeds or grated cheese if desired.
Bake the bread:
Preheat the oven to 175°C (350°F). Bake for 18–25 minutes, or until the tops are golden brown.
