Filipino Squash Bread

Filipino squash bread, also known as kalabasa bread, is a soft and slightly sweet bread made with mashed kalabasa (squash). It incorporates the natural sweetness and vibrant yellow-orange color of squash, making it a nutritious and visually appealing treat. Commonly enjoyed as a breakfast or snack, it pairs well with coffee or hot chocolate.


Ingredients for Filipino Squash Bread:

For the Dough:

  • 3 cups all-purpose flour (plus extra for dusting)

  • 1/2 cup mashed kalabasa (cooked and cooled)

  • 1/3 cup sugar

  • 1/2 teaspoon salt

  • 1 packet (7g) instant yeast

  • 1/4 cup warm milk

  • 1 large egg

  • 1/4 cup softened butter

Optional Toppings:

  • Sesame seeds

  • Grated cheese

  • Butter glaze

How to Bake Filipino Squash Bread:

  1. Prepare the kalabasa:

    • Peel, remove the seeds, and cut the kalabasa into small cubes. Steam or boil until soft, then mash and let it cool.

  2. Activate the yeast:

    • In a small bowl, dissolve the yeast in warm milk (around 38°C or 100°F). Let it sit for 5–10 minutes until it becomes foamy.

  3. Mix the dry ingredients:

    • In a large mixing bowl, combine the flour, sugar, and salt. Mix well.

  4. Incorporate the wet ingredients:

    • Add the mashed kalabasa, yeast mixture, egg, and softened butter to the dry ingredients. Mix until a dough forms.

  5. Knead the dough:

    • Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5 minutes.

  6. First proofing:

    • Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise for 1–2 hours, or until it doubles in size.

  7. Shape the bread:

    • Punch down the dough to release air. Divide it into equal portions (around 8–10 pieces) and shape them into balls, rolls, or small loaves.

  8. Second proofing:

    • Arrange the shaped dough on a baking tray lined with parchment paper or greased. Cover and let it rise again for 30–45 minutes until puffy.

  9. Add toppings (optional):

    • Brush the tops with milk or egg wash for a golden finish. Sprinkle sesame seeds or grated cheese if desired.

  10. Bake the bread:

    • Preheat the oven to 175°C (350°F). Bake for 18–25 minutes, or until the tops are golden brown.

  11. Cool and serve:

    • Let the bread cool slightly before serving. Enjoy warm or at room temperature.
